Spring into... PA?

Thanks mom for reminding me that "You haven't blogged since February!"

Last month went pretty fast, we filed our taxes with TurboTax (it worked really well!), we booked our flight to Greece for July, my artwork sold at a charity auction at Whole Foods,  I completed a triathlon,  and I ate about 20 Vietnamese spring rolls.

Ryan and I, in true "us" fashion, decided to take a vacation between the time of us leaving Salt Lake and moving into our place in Harrisburg.  We are hitting some beautiful islands while we are there, and I am am looking forward to having a stuffed grape leave either in my mouth or in my hand at any given moment for the duration of the trip.  

At the beginning of the month I took some of my Alcohol Inks on tile to Whole Foods in Cottonwood Heights to donate to their "Whole Planet Foundation" auction.  Happy to report that my aspen trees did really well and raised enough for a few micro-loans for entrepreneurs in developing nations.  

I went to the Asian grocery store with no cash, and as they have a 10 dollar minimum for credit cards, I walked out with a ton of spring roll wrappers and about a pound of mint leaves in addition to the fish sauce and tamarind paste I had originally set out to buy.  I made *alot* of spring rolls that week, Ryan had a couple, but the majority were eaten by yours truly.  It will be a while before I have another.

I started up with the Sports Mall triathlon club in February and after 6 weeks of training 4 days a week, the indoor mini-tri was held on March 29th.  Ryan came to cheer me on.  It was a really fun day and we ended up winning a gift card to a restaurant at the end.  The hardest part was the swimming.  My heart rate was up because of all the excitement of the competition and that caused my breathing to be too fast and before my first lap was over I was in total panic-mode.  I didn't think I was going to make it to the end of the swim, but I did!

Earlier this month we traveled to Lititz to mourn the loss of Ryan's grandfather.  It was nice to be able to spend time with his family and be with his grandma, and we will be staying with her again when we go to Harrisburg this weekend.  

We will be heading to the airport around 2pm to catch our flight to Harrisburg and commence with the apartment hunt.  Glad we have Easter with family to look forward to. :)
